Today I made Banana Muffins because we had loads of Bananas and my Mum wanted me to get rid of them so instead of making a smoothie she suggested I made muffins. I didn't want to just make banana muffins as I thought that would be boring so I made six Banana and Blueberry muffins and six banana 's and chocolate chip muffins to add a bit of variety.
This BBC recipe says it makes 10 but I was able to get 12 big muffins out of the mixture. I love the idea of these because they are delicious and pretty healthy!
The recipe says to add in Walnut Kernels at the end I didn't because my Mum is allergic to nuts which is why you won't see them in the picture.
Ingredients
- 75g/3oz melted butter
- 250g/9oz self-raising flour
- 1 tsp baking powder
- ½ tsp bicarbonate of soda
- pinch of salt
- ½ tsp ground cinnamon
- ½ tsp ground nutmeg
- 115g/4oz caster sugar
- 1 tsp vanilla extract
- 2 large, ripe bananas
- 2 medium eggs
- 125ml/4fl oz milk
- 10 walnut kernels (optional)

Preparation method
- Heat the oven to 190C/375F/Gas 5. Melt the butter and allow to cool. Mash the bananas well. Sift the flour, baking powder, bicarbonate of soda, salt, cinnamon and nutmeg together in a large bowl, add caster sugar and stir through.
- With a fork, beat together the eggs, vanilla extract, melted butter and milk in a second bowl. Add the mashed banana and stir through.
- Make a well in the centre of the dry ingredients and add the egg mixture, stirring roughly with a fork (don't over mix) until it is a lumpy paste.(After this step I separated the mixture into two bowls, and in one bowl I cut up six squares of galaxy into chocolate chips and added them to the banana mixture and in the other bowl I added about twenty blueberries (but how many you add is up to you). After mixing the blueberries in and chocolate chips in the two separate bowls I spooned them into the cupcakes cases.
- Set paper cases into the moulds, or grease the moulds well with a little extra oil or butter and spoon in the mixture until almost full. Top each one with a walnut kernel if you like.
- Bake for 20 to 25 minutes or until the muffins come away from the side of the pan when touched. Rest the muffin tray on a wire rack for five minutes then remove the muffins and leave on the rack for another five minutes before serving.
- Serve the muffins with sliced banana and a dollop of creme fraiche, scattered with walnuts and drizzled with honey (or with Caramel yoghurt).My family and I have just tried them, I tried the blueberry one and I honestly really enjoyed it; I'm not just saying that because I made them, everyone thought they were really tasty so I would recommend you try them as they weren't difficult! The picture I have added is mine and that is how my muffins turned out!
